The farm has 80 hectare planted of coffee and plantain. Daniel has used specialty coffee as an opportunity to add value to what he plants on his farm.
The fruit is selected within a certain objective ripening range for the profiling of the fruit. The coffee then goes into a controlled fermentation process for 40 hours in conditioned
tanks. The temperature and PH are constantly measured.
"La Mina" means mine in Spanish.
